Says Eric Gertner, ‘We pride ourselves in featuring unusual cheeses from small producers. The cacciotta dolce di pecora is handmade in the traditional old-world way, using the milk of free-range and naturally fed sheep. It is allowed to mature in caves, thus yielding a delicate, nutty and complex flavor.”
