“Each cheese on display (at Feast) has an information card containing the country of origin, type of milk used, its history and tasting notes. Says Eric Gertner, ‘We pride ourselves in featuring unusual cheeses from small producers. The cacciotta dolce di pecora is handmade in the traditional old-world way, using the milk of free-range and naturally fed sheep. It is allowed to mature in caves, thus yielding a delicate, nutty and complex flavor.”
